Buckwheat Pasta with Cherry Tomatoes & Avocado


  • 2 ½ cups buckwheat pasta
  • 1 cup diced red onion
  • 1 ½ cups cherry tomatoes halves
  • 1 tablespoon lemon juice
  • ¾ Avocado, fresh removed and sliced
  • 1 tablespoon olive oil
  • 4 teaspoons PICKLD Mint Seasoning
  • Premium Blend Salt & pepper to taste

    How To Cook :

    Step 1

    Bring slightly salted water to the boil and cook buckwheat for 8 – 10 minutes until tender, or al dente.

    Step 2

    Meanwhile, heat olive oil in a pan over medium high heat and add onion. Sauté for 3 – 4 minutes, until onion begins to soften.

    Step 3

    Add PICKLD Mint Seasoning to onions, sauté for 2 minutes

    Step 4

    Add the tomatoes and toss through for another minute

    Step 5

    Combine pasta and lemon juice with the onions and tomatoes. Top each serving with ¼ of an avocado and a sprinkle of PICKLD Mint Seasoning Blend.
