Creamy Pea & Mint Soup


  • 1kg bag or 6 2/3 cups green peas
  • 1 medium brown onion, diced
  • 1 medium white potato, peeled and cubed(small)
  • 3 cups vegetable stock
  • 1 medium garlic clove, crushed
  • 1 tablespoon olive oil
  • 3 tablespoons PICKLD Mint Seasoning Premium Blend
  • Salt & pepper to taste
  • A swirl of coconut cream for serving (optional)

    How To Cook :

    Step 1

    Heat the oil in a large saucepan over medium high heat and sauté the onion for 2 minutes.

    Step 2

    Add the garlic and sauté for 30 seconds.

    Step 3

    Next add the potato and stock. Bring to the boil then lower the heat to a simmer, cover with a lid and cook for 15min until the potato has softened.

    Step 4

    Combine the peas and one tablespoon of the PICKLD Mint Seasoning into the mixture and simmer covered for another 4 minutes.

    Step 5

    Blend the soup, this is best done in batches, before returning to the pot to heat one final time with the remaining 2 tablespoons of PICKLD Mint Seasoning before serving.

    Step 6

    Season with salt and pepper to taste and serve with an additional sprinkle of PICKLD Mint Seasoning and coconut cream if desired.
