Cypriot Style Potato Salad


  • 6 medium – large yellow potatoes, peeled
  • 1 red onion, sliced thickly
  • 1 cup Kalamata olives, roughly chopped
  • 2 tablespoons capers, rinsed
  • 1/3 cup at leaf parsley, finely chopped
  • 2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 6 teaspoons PICKLD Coriander Seasoning Premium Blend
  • Salt & pepper to taste

    How To Cook :

    Step 1

    In a pot, bring potatoes to boil in slightly salted water. Reduce heat, cover with a lid and cook for approximately 12 minutes, or until the potatoes are just cooked through but not too soft.

    Step 2

    Drain potatoes and once they are cool enough to handle, slice into bite sized pieces and set aside.

    Step 3

    Heat oil in a large frying pan and add onion, sauté for 3 minutes.

    Step 4

    Add the olives and capers and sauté for another minute.

    Step 5

    Add the potatoes and the other remaining ingredients and cook for another 3 minutes, carefully combining all the ingredients together.

    Step 6

    Gently mix the parsley leaves through, season to taste and remove from the heat.

    Step 7

    Serve warm or cold with another sprinkle of PICKLD Coriander Seasoning
