Microwaved Potatoes with Mixed Vegetables & Black Beans


  • 4 medium yellow potatoes, scrubbed well under water
  • ¼ cup diced brown onion
  • ¼ cup frozen corn kernels
  • ¼ cup finely chopped carrot
  • ½ cup finely chopped broccoli
  • ¼ cup cooked black beans
  • 1 tablespoon olive or coconut oi
  • 4 teaspoons PICKLD Savoury Coconut Seasoning Premium Blend
  • Salt & pepper to taste
  • Optional: Top with a sprinkle of shredded vegan cheese

    How To Cook :

    Step 1

    Use a fork to poke 10 sets of holes all over each potato. Place 2 potatoes on a plate, with a piece of paper towel underneath them, and microwave for 5 minutes. Turn the potatoes over and microwave for another 5 minutes.

    Step 2

    Meanwhile, heat the oil in a frying pan or saucepan and add the onion. Sauté for 1 minute then add the corn kernels and carrot.Sauté for another 2 minutes then add the broccoli. After 2 minutes,add the black beans, PICKLD Savoury Coconut Seasoning and season with salt and pepper. Stir to combine and remove from the heat

    Step 3

    Once the potatoes are cooked, slice them across the top to create a cross. Use a spoon to scoop out a tablespoon and a half of the potato from the middle of the cross.

    Step 4

    Combine the potato with the sautéed vegetables and stu each of the potatoes with the mix. Top with a sprinkle of shredded vegan cheese if desired and microwave for another 1 – 2 minutes

    Step 5

    Serve hot with a sprinkle of PICKLD Savoury Coconut Seasoning Blend.
