Quinoa Tabbouleh Salad


  • ¾ cup quinoa (white, red or tri coloured), rinsed
  • ½ cup diced tomato
  • ½ cup diced cucumber
  • 1 cup diced capsicum (red or orange)
  • ¼ cup finely chopped red onion
  • ¼ cup chopped float leaf parsley
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 5 teaspoons PICKLD Mint Seasoning Premium Blend
  • Salt & pepper to taste

    How To Cook :

    Step 1

    Combine quinoa and water in a saucepan and bring to the boil.Reduce heat to a simmer, cover with a lid and cook for 15 minutes,or until all the water has been absorbed

    Step 2

    Meanwhile, prepare all the other salad ingredients and combine into a mixing bowl.

    Step 3

    Once quinoa has cooked and cooled, u with a fork and add to the mixing bowl with the other salad ingredients, stir through lemon juice, olive oil, PICKLD Mint Seasoning and season with salt and pepper to taste. Serve topped with a sprinkle of PICKLD Mint Seasoning.

    Step 4

    Serving suggestion: Enjoy on its own or as a delicious filling in a wrap/kebab.
