Stir Fried Couscous with Crunchy Sautéed Eggplant


  • 1 medium sized eggplant diced or 2 cups of,diced eggplant
  • 10 pitted dates roughly chopped
  • 10 pecan nuts or almonds
  • 6 teaspoons of PICKLD Coriander Seasoning Premium Blend
  • 50 ml of water
  • 1/4 cup of olive oil
  • 1/2 teaspoon of ground cinnamon
  • 250 gms couscous
  • Salt to your taste

    How To Cook :

    Step 1

    Heat oil in a pan for 2 min. Add cinnamon, dates and nuts and sauté it for 1min

    Step 2

    Add the diced eggplant and salt and stir for 1 min.

    Step 3

    Add water and cover the pan and cook the eggplant for 6 min.

    Step 4

    In the meantime, cook the couscous as per the instructions in the packet. Remove lid, add PICKLD Coriander Seasoning and stir for another 2 min Add the cooked couscous to eggplant and stir for another 3 min.Make sure there are no clumps and that couscous is mixed well with eggplant.
