Sweet Pearl Couscous Salad


  • 1 ½ cup pearl couscous
  • 1 ½ cups canned chickpeas, rinsed
  • 1 orange, rind grated and juiced
  • 1 ¼ cups red grapes, halved
  • ½ cup dried apricots, chopped
  • 1 ½ cups rocket (packed)
  • 1/3 cup slivered almond
  • 2 tablespoons olive oil (divided)
  • 4 teaspoons PICKLD Mint Seasoning Premium Blend
  • Salt & pepper to taste

    How To Cook :

    Step 1

    Heat 1 tablespoon of oil in a pan and add the couscous. Stirthe couscous through the oil for 20 seconds before adding 1 ½ cups boiling water. Reduce to a simmer and cover for 8 – 10 minutes, stirring occasionally.

    Step 2

    Once the water has absorbed, remove from the heat and mix through the other tablespoon of oil and allow to cool, stirring occasionally to prevent the couscous from sticking. To cool faster, spread couscous onto a sheet of baking paper

    Step 3

    In a mixing bowl, combine couscous with the orange juice, orange rind, rocket, slivered almonds, red grapes, dried apricots, chickpeas and the PICKLD Mint Seasoning. Season with salt and pepper to taste and top each serve with a sprinkle of PICKLD Mint Seasoning.
