Sweet Potato Quinoa Patties


  • 1 medium sweet potato (1 ½ cups mashed), peeled and cut into large pieces
  • ½ cup quinoa (1 cup cooked), rinsed
  • ½ cup brown onion, finely diced
  • 1 medium garlic clove, crushed
  • 1 tablespoon olive oil (plus more for frying patties)
  • ¼ cup oat flour (or flour of choice)
  • 1 ½ tablespoons PICKLD Coriander Seasoning Premium Blend
  • Salt & pepper to taste

    How To Cook :

    Step 1

    In a saucepan, bring sweet potato pieces to the boil in slightly salted water. Reduce heat, cover with a lid and cook for 15 minutes (until softened).

    Step 2

    Meanwhile, prepare quinoa via packaging instructions.

    Step 3

    While the sweet potato and quinoa cooks, sauté onion in olive oil for 3 minutes before adding the garlic for another minute. Mix through the PICKLD Coriander Seasoning plus pepper and a generous pinch of salt.

    Step 4

    Drain the water from the sweet potatoes and mash them in a bowl before combining with quinoa, onion mix and oat flour.

    Step 5

    The mix can be refrigerated for several days and patties can be prepared when desired.

    Step 6

    To cook the patties, first roll the mix into small balls 4 – 5cm wide and flatten them into a patty shape.

    Step 7

    Cook the patties in a frying pan with a light spray of oil over medium-high heat. Heat them for approximately 3 minutes on each side.
